Sustainable Sushi
After reading Trevor Corson's excellent piece and posting the entry below, I started poking around the web to learn more about sustainable sushi. The variety of raw fish we typically eat here in America compared to what's enjoyed in Japan is so limited -- folks, it's time to discover all the fabulous, delicious fish beyond bluefin, salmon and hamachi! This site is a good start, plus to learn more check out Mashiko, the sustainable-only sushi bar in Seattle that Trevor mentions, Tataki in SF, and finally, this article in the Seattle Times.
