Dashi Spray
Need to liven up fish, chicken, salad, even vichyssoise (yes, mentioned in the product literature) - give 'em a shpritz of umami! I found this new dashi spray at Mutual Trading's recent Japanese restaurant show here in NYC. A potent combination of kombu, salt, and katsuobushi, dried scallop, dried shrimp and dried shiitake dashi, it's produced by kombu dealer Matsumaeya. I shpritzed my omelet this morning, nice!
