Sushi Beyond Bluefin
Check out this article by Trevor Corson, which first appeared in the Christian Science Monitor. Trevor, the author of The Story of Sushi, argues it's time to discover a world of sustainable good-eatin' sushi fish beyond bluefin tuna, which is a modern dining conceit, not an age-old Japanese raw ingredient, something I learned, too, to my surprise.
