The Japanese Approach to Healthy Eating

At the CIA Japan: Flavors of Culture conference, author Hiroko Shimbo moderated a terrific panel on healthy eating, the Japanese way. Click on this link to listen (sorry it's scratchy at first; the audio settles down, more or less, after 10 seconds). Also, check out some images of slides from the panel, below. (Credits for the slides: Hiroko Shimbo, Dr. Yukio Hattori, Dr. Lawrence Kushi)

PS: As an added bonus, here's a link to an interesting KQED radio interview from the conference featuring scholar Elizabeth Andoh and chef Hiro Sone. Click here to listen.

I am very interested in Japanese cuisine for healthy eating. Can you suggest simple meals with smple ingredients without me having to buy up the whole store. Also, can you suggest a good book that I can purchase re Japanese cooking/ingredients/meal plans, etc. Thank you.
