Check out this excellent interview with Chef Nishihara on Marc Matsumoto's terrific blog, No Recipes. Chef Nishihara runs the kitchen at Kajitsu, a restaurant I mentioned before, one based on Shojin ryori vegetarian cooking. What I love about Kajitsu, which Marc talks about, too, is how Nishihara-san incorporates Western veggies he finds here, in addition to traditional Japanese ones. Just fantastic.
